Firstly, if you do not have citizenship of the country you are trying to get work in, it is illegal. You will have no employee rights (ie if the employer decides not to pay you) and you could face jail/deportation.
That said, it depends on your skill. You you don't speak any other languages, or have a unique skill, then you are stuck with simple tasks. Youth hostel will often let you clean or organize fun night or something for a free bed for the night (sometimes even beer money). bar work is not impossible, if you already know what you're doing. But none of these pay particularly well.
if you're just passing through, it is much harder to make contacts. typically it's after spending a while in an area that you find work.
There's always things like WWOOFing. While there is no money involved, you get a free place to stay and free food.
